Smoky-Sweet Tanka Wraps

Ingredients:


1 cup bulgur, cooked
1/2 ripe avocado
10 Smoky-Sweet Tanka Bites Traditional bison-cranberry bites
1 tablespoon chives, chopped
2 large orange peppers, finely diced
1 8-ounce can water chestnuts, rinsed and chopped
1/2 cup reduced-sodium beef broth
2 tablespoons soy sauce
1 teaspoon chili powder
1/2 teaspoon sea salt
2 heads Red Leaf lettuce, leaves separated
1 cup Greek plain yogurt, for topping
2 large carrots, shredded

Preparation


In a food processor, combine avocado and Tanka bites; pulse until well blended.

Transfer mixture to a large mixing bowl. Add in the cooked bulgur, bell pepper, water chestnuts, beef broth, soy sauce, chili powder and sea salt; cook over medium heat on the stove top for 2 minutes.

Remove from heat and serve, spoon portions of the Tanka mixture into lettuce leaves, top with a dollop of Greek plain yogurt and carrot and roll into wraps.
