Tanka Salad Sandwich

Ingredients:

2 Traditional Tanka Bars
1/4 cup minced red onion
2 tablespoons lime juice
1 tablespoon olive oil
1/4 teaspoon freshly ground white pepper
1/4 cup Greek plain yogurt
2 Tbsp. spicy mustard
8 slices rye bread, toasted
8 slices tomato
4 large leaves Red Leaf lettuce

Preparation:

Combine Tanka Bars, onion, lemon juice, oil and pepper in a food processor; blend until smooth. Spread 1 tablespoon Greek yogurt and a squirt of spicy mustard on each of 4 slices of bread. Spread 1/2 cup Tanka salad over the Greek yogurt. Top with tomato slices, lettuce and another slice of rye bread.
