Whip up a Tanka twist on the basic egg scramble
Just to let you know, this tastes WAY better than it looks! And I promise there were no leftovers. I wanted to call this a Tanka Stir Fry Egg Scramble but I'm sure that title is too long!

Egg scrambles are a nice alternative to a basic lunch plus it is pretty quick and easy to make. Not to mention Tanka just tastes so yummy with eggs. Because we have nutritious, paleo-friendly meals up here at the office, this was prepared to feed about 10 people. Feel free to tailor the measurements. Also note we used stir fry veggies that include sugar snap peas. Being located in a food desert, a bigger variety of vegetables come in a frozen option as opposed to fresh.

The recipe is as follows:

2 dozen eggs
1 large onion, diced
1 green pepper, diced
2 packages of frozen stir fry veggies (avoid the ones that have extra seasoning and gross fake stuff in it)
1/2 clove of garlic, diced
3-4 cups of Tanka Bites, Sticks or Tanka Buffalo Hot Dogs (cut into pieces)


I like to cook with coconut oil for the health benefits and the slight flavor. Heat just enough in your pan to cook all your veggies, including the packages of stir fry veggies and your favorite Tanka product. We used Tanka Bites. While that is cooking (stir occasionally), scramble your eggs with sea salt, pepper and chili pepper in a bowl. Get a large sauce pan or wok (two if you don't have one big enough to accommodate two dozen eggs) ready with coconut oil to cook your scrambled eggs.

In a large pan (or two), combine all of your ingredients together and cook long enough for everything to heat up together.

Serve up alone or with a baked sweet potato. Better yet, you can slice up and cook the sweet potato as an addition to your veggies. Experiment! It's always a fun time in the kitchen when you do and if you mess up, you just learn what NOT to do next time.
